Job Role: ExecutiveChef

AnExecutive Chef will build a reputation for the hotel by maintaininga talented and creative kitchen brigade, offering an innovationmenu, and promising an exceptional culinary experience.

As Executive Chef, you are fullyresponsible for developing the reputation of the hotel through theproduction of excellent quality food throughout the hotel, and thedevelopment of a high quality kitchen brigade. An Executive Chefwill oversee the operational management of the kitchen and TeamMembers. Specifically, an Executive Chef will perform the followingtasks to the highest standards:

  • Leadof the kitchen brigade and ensure ongoing development of TeamMembers
  • Identify an effective approach tosuccession planning
  • Create menus that meet andexceed customers' needs and conform to brandstandards
  • Ensure the consistent production ofhigh quality food through all hotel food outlets
  • Develop positive customer relations through proactiveinteraction with Guests, Team Members, contractors, andsuppliers
  • Resolve, promptly and completely,any issues that may arise in the kitchen or related areas amongGuests and Team Members
  • Manage departmentoperations, including budgeting, forecasting, resource planning,and waste management
  • Manage all aspects of thekitchen including operational, quality and administrativefunctions
  • Actively seek verbal feedback fromcustomers on a regular basis and respond to all guest queries in atimely and efficient manner
  • Ensuring adequateresources are available according to business needs
  • Manage the provision of food to Food and Beverage outletsand taking action where necessary to ensure compliance with currentlegislation
  • Control costs without compromisingstandards, improving gross profit margins and other departmentaland financial targets
  • Ensure team members havean up-to-date knowledge of menu items, special promotions,functions and events
  • Maintain goodcommunication and work relationships in all hotel areas
  • Ensure that staffing levels are maintained to coverbusiness demands
  • Ensure monthly communicationmeetings are conducted and post-meeting minutesgenerated
  • Manage staff performance issues incompliance with company policies and procedures
  • Recruit, manage, train and develop the kitchenteam
  • Comply with hotel security, fireregulations and all health and safety and food safetylegislation
  • Ensure maintenance, hygiene andhazard issues are dealt with in a timely manner
  • Manage financial performance of the department so allplanning is in line with hotel objectives
  • Manage food control systems are adhered to them so margins are on target in a pro-active way
  • Regular review of all menus with Food and Beveragemanager to confirm offerings are in line with markettrends
  • Be environmentally aware
  • Ensure food wastage program is adhered to so that marginsare on target
  • Responsible for ensuring thatthe monthly working schedules are made and maintained in accordancewith local legislation

Tosuccessfully fill this role, you should maintain the attitude,behaviours, skills, and values that follow:

  • Previous, relevant experience as an Executive Chef or ahigh-performing Sous Chef in a first class property,required
  • Excellent leadershipskills
  • A creative approach to the productionof high quality food
  • A business focusedapproach to managing a hotel kitchen
  • Excellentcommunication skills
  • Ability to buildrelationships, internal and external, to the hotel and theCompany
  • Excellent planning and organizationalskills
  • Ability to multi-task and meetdeadlines
  • A current, valid, and relevant tradequalification (proof may be required)

It would be advantageous in this position for you todemonstrate the following capabilities and distinctions:

  • A certification in management
  • Proficiency with computers and computer programs,including Microsoft Word, Excel and Outlook
